Good evening my loyal blog readers, in my bid to find healthy(ish) recipes whilst I remain unable to exercise, I stumbled across this old favourite which is quite nice to munch as a wee snack. Well, unless you plan on smooching anyone shortly after who may not have had the pleasure of munching this with you.
Smoked Mackerel Pate and Oatcakes
The big plus of this dish is that it's super cheap to prepare and at the same time, it's incredibly filling.To make this you'll need:
- 150g smoked mackerel, skinned and flaked
- 200g quark (or soft cheese if you're struggling to find this)
- 1 tbsp of horseradish
- 6 mini gherkins, chopped
- A little dill
- Some oatcakes
- Fresh watercress
Now this is a piece of cake to put together! Simply pop the mackerel, quark, horseradish and mini gherkins into a blender and give it a bit of a blitz (not to much or it'll be mush).
Then it's time to plate up, the beauty of this is that it can be served immediately! I served mine in a little glass dish with the oatcakes and salad on the side, adding a little dill to the pate at the end.
Quick, cheap, easy and effective for when you need something in a hurry!
