As I'm sure I've mentioned before, mid-week I really do not have the time to spend hours in the kitchen cooking up something delicious to munch. Instead, I prefer quick and easy meals (which preferably make enough for lunch the following day) which are not only healthy but full of flavour.
Quick Chicken Biryani with Spinach
As Ad grew up with the Balti Triangle on his doorstep, he's a sucker for a good curry. Whilst curry is not my forte, a good curry paste, like the one I've used here, certainly goes a long way to helping create the illusion that you know your stuff. For this recipe you'll need:
- Olive oil
- Chicken thighs or chicken breast - cut into chunks
- 3 tbsp of tikka curry paste
- 1 chopped red onion
- 2 cups of rice
- 1 cinnamon stick
- 400ml of coconut milk
- 125g of spinach
- Salt & pepper
- 1 tsp of garam masala
First things first, heat the oil and brown off your chicken for around 5-6 minutes.
Once your chicken is nicely browned, add your garam masala, onion and almost all of the curry paste before giving things another stir around.
Next, plonk in your cinnamon stick, the rice, the coconut milk and around 100ml of water and bring everything to the boil before reducing the heat.
Cover the pan and leave until all the water has absorbed. As I am paranoid about burning crunchy bits I like to give it a stir every so often to see how things are doing.
When things are almost cooked, add the spinach. The residual heat should wilt this down nicely.
I like to serve mine with a sprinkle of onion seeds and some mango chutney on the side.
If you like things with more heat, you can always have with a super hot mango chutney which not only adds a fruity edge but will give the dish more fire. Hope you enjoy!
